As baking is usually a form of chemistry, and I am terrible at chemistry, this is another recipe review because I cannot write my own baking recipes... However, I've made these muffins a million times and have again adapted the recipe to my liking and I believe everyone else how tries these adaptations would like them too! And as usual, this one is very very very easy.
So again, like all my recipe reviews, I'll start with the recipe straight from allrecipes.com and add my own annotations (in this color) to try and bridge the gap between the two.
Here we go!

Ingredients
For the muffins
1 1/2 cups of all purpose flour
3/4 cups of white sugar
1/2 tsp of salt
2 tsp of baking powder
1/3 cup of vegetable oil (you can use coconut oil here as well but for best results use vegetable oil)
1 egg
1/3 cup of milk
1 cup of fresh blueberries (you can go a little overboard here and add more than 1 cup...)
For the topping
1/3 cup of all purpose flour
1/4 cup of butter (cubed)
1 1/2 tsp of cinnamon (I went ahead and rounded to 2 tsps and YUM)
Directions
Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
This is my extra step. If you follow this recipe to the letter, the muffin batter comes out very thick, so I like to add an extra 1/3 cup of milk or water. I think thinning the mixture is best for these muffins and it helps make them come out very fluffy!
To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking. (I've found that the smaller you cube the butter the easier it is to mix, but definitely use a fork for this step. It helps keep the topping very crumbley which is absolutely To Die For...)
Bake for 20 to 25 minutes in the preheated oven, or until done.
This is what your crumble topping should be like consistency wise.
Tips and Tricks
I don't really have any this time! Just follow the directions this time and you're good to go! Enjoy!
